Rice pilaf is a tasty side dish traditionally made with stock. But you can still make a great pilaf dish even if you don’t have stock on hand. Our recipe includes pine nuts, because we usually have them on hand. Pine nuts add great flavor and texture to your dish and they’re fairly versatile, but can be super expensive. So you can replace them with orzo pasta in this recipe.
1 cup brown rice
1 package of cherry tomatoes (or 2-3 large tomatoes of any variety), diced
1 medium shallot, finely chopped
1/4 cup dry white wine (we use vermouth)
1/4 cup pine nuts (or up to 1/2 cup orzo pasta)
A handful of fresh parsley, roughly chopped
1 Tbsp butter
Salt and pepper
Start cooking brown rice (1 cup brown rice to 2 cups of water- bring to boil then reduce to low, cover and cook about 30 mins). While rice is cooking, start prepping tomatoes, shallot, and parsley. When the rice is finished, set it aside and start melting butter in a pan over medium heat. Add shallot, tomatoes and pine nuts. Cook until shallots are translucent. Add the wine and rice. Season with salt and pepper to taste. Add parsley. Stir to combine. Serve and enjoy!
