Sautéed leafy greens makes a great side for almost any dish. Kale is the favorite in our home. It’s good for you, and if seasoned and cooked properly, quite tasty as well! Here’s a quick and easy go-to recipe.
1 bunch of Kale
1/2 Meyer lemon (or any lemon…but Meyer is fantastic)
Salt and pepper
Olive oil (about 1 Tbsp)
Remove leaves from the stem and roughly chop. Zest 1/2 lemon onto the kale. Season with salt and pepper (be careful not to over-salt). Note: we do all of this on the cutting board. Set a pan over medium-heat, coat bottom of pan with olive oil. When oil is hot and rippling (but not smoking) add kale to the pan. Sauté for about 1-2 minutes, stirring constantly, until Kale is wilted but not soggy. Serve immediately.
